Medium-sized dough ingredients: bread flour and high-sugar resistant yeast powder.

Mix the yeast powder and water, add it to the bread flour, stir evenly, and put it in the refrigerator to ferment for 10 hours.

Ingredients for the main dough: medium-sized dough, bread flour, eggs, milk powder, salt, butter, dried cranberries, and white sugar.

Add medium-sized dough, eggs, milk powder, bread flour, and sugar into the bread barrel and start the dough mixing process.

When the dough is formed, add salt and continue kneading.

When the dough becomes smooth and the film can be pulled out, add butter and continue kneading.

When the dough can be pulled out of the film well, pierce it with your hands, and the holes will have smooth edges. Take out the dough, shape it into a round shape, and place it in a basin to ferment at room temperature.

When the dough swells to 2 times in size, press the dough lightly with your edge. If there is an obvious indentation and it does not shrink or collapse, the fermentation is complete.

Take the dough out of the bowl and move it to the board. After it is fully deflated, divide it into 6 equal parts, roll it into a round shape and let it rest for 10 minutes.

Cut dried cranberries into small cubes and set aside.

Take a small piece of dough and roll it into an oval shape.

Spread the cranberries evenly over the dough.

Roll it up from top to bottom, seal it and let it sit for 10 minutes.

Take out three pieces of dough that have been made one by one, and stack the heads on top of each other.

Braid it into a twist shape, you can make 2 out of 6 pieces of dough.

Put it into the mold for fermentation. I use the fermentation setting of the oven and put a bowl of boiling water at the bottom of the oven.

After the bread is fermented, apply egg wash and preheat the oven to 180 degrees for upper heat and 185 degrees for lower heat. Bake the bread in the oven for 35 minutes and then take it out to cool.
