Prepare a container, preferably one that can be sealed. I use a glass crisper.

Chop the ginger, garlic, millet pepper, and chili pepper. My millet pepper is a bit dry and not that spicy. If you like it spicy, you can put more. I put more ginger here, more than three slices, and the juice is a bit spicy.

Mix sugar, white vinegar, and seafood soy sauce in a ratio of 1:2:3. You can add more as you like.

Cover and simmer for 15 minutes.

Wash the prawns. The live shrimps I bought were almost half dead when they got home, so I washed them all and selected the live ones.

When 15 minutes are up, I use the spoon I have at home, which is probably the same spoon I use when eating hot pot, and put four spoons of rice wine into the sauce. I used semi-sweet rice wine, some used Huadiao wine, but I didn’t buy it when I bought it. Some people told me that rice wine is Huadiao wine, and later I heard that Huadiao wine is the best among rice wines, because I later saw that the Huadiao wine sold in the supermarket also said rice wine under it, and I didn’t understand it, so there is no need to waste such expensive money on this.

I also secretly added the white wine that I have always collected at home. Anyway, this wine is either used for making this or making pickles.

Take a good posture and put the prawns into the crisper one by one. Be sure to use the lid to block them when you put them in, otherwise they will really jump everywhere.
