Prepare the meat skin, clean it and remove the hair.

Put the pork skin into a pot with cold water, add cinnamon, star anise, green onion, and white wine and blanch for 3 minutes. Dish out and rinse with cold water to clean away the foam. Put it back into the pot and cook. Use chopsticks to insert into the skin of the pork and fish it out.

Use a knife to scrape off the fat in the meat skin, wash it (add baking soda to water), wash it several times, cut it into appropriate sizes, and lay it flat on the chopping board to shape it (for easy frying later).

Thread, hang, and dry (a week or so).

Heat the pot, add cold oil and dried pork skin to the pot.

As the oil temperature rises slowly, use a spatula to press the skin of the meat until it swells.

Just take it out.

Sprinkle a little seasoning on it and eat it directly, or soak it in water and make it good for cooking and soup.
