Place the clove fish on the table, carefully check if there are any foreign objects? If there is, remove it.

Place it in a small container, pour water into it, submerge the dried fish, wash it gently with your hands, pour out the sewage, and wash it repeatedly until the water is clear.

Place on a sieve to drain and set aside.

Cut peppers diagonally.

Cut the dried beans into 2mm thickness.

Put 1000cc of oil in the wok, heat it to about 100 degrees, add the cut dried tofu, fry slowly until slightly brown, take it out with a slotted spoon, drain the oil and set aside.

Then continue to add small dried fish and fry.

Fry for about a minute and remove with a slotted spoon.

Turn to medium heat, heat the oil to about 120 degrees, then add the dried fish and continue frying for about 30 seconds, then take it out and turn off the heat. In this way, almost all the moisture in the dried fish is eliminated and it tastes a bit crunchy.

Pour the remaining oil into a bowl, turn on high heat, use the remaining small amount of oil in the wok to add dried chili fish, stir-fry the seasonings and serve.
