Cabbage meatballs and vermicelli soup

The raw materials are as shown in the picture. After the meat filling is mixed, 30 meatballs are made and only half of the filling is used. Instead of using vermicelli, I used a bag of crystal powder, which may be packed in 200 grams. It is more resistant to cooking and tastes better than vermicelli, but I forgot to take a picture of the crystal powder.

Chop the green onion and ginger into mince. Cut the two pieces of cabbage into small pieces. Chop the tenderloin in advance and cut the cabbage leaves into cubes for later use.

Add salt, soy sauce, thirteen spices, and pepper. If you have oyster sauce, you can add a tablespoon. I don’t have it at home, so I didn’t add it this time.

Stir vigorously in one direction until the meat filling forms a ball and the resistance is great. Add some sesame oil to make it fragrant.

Place a pot on the stove, add an appropriate amount of cold water, and turn on low heat.

The balls squeezed by hand are relatively round, use a small spoon to scrape them off and put them into the pot.

Don't move the meatballs after they are placed in the pot, turn on medium heat. This time I squeezed 30 pieces, and half of the meat filling was left.

When the meatballs float, turn up the heat, skim off the foam with a large spoon, cover the pot and cook for five minutes. Taste the saltiness of the soup. This time I put more salt and the taste is just right. No need to add salt. If there is less salt in the meatballs, the soup will be very light. You can add some salt.

Add the crystal powder and cook for five minutes, then add the cabbage and cook for another five minutes. It is almost ready. You can also taste the crystal powder to make sure it is ready.

Put a little pepper and vinegar in the soup basin to enhance the flavor. A spoonful of vinegar will do, the same spoon you used to make the meatballs. You can also cut some minced garlic or coriander to add freshness.
