Spicy Black Bean Duck
Overview
The weather in summer is so hot that I don’t want to eat, but a spicy duck with black bean sauce is very delicious. Every time I make it, my family always eats a few more bowls of rice than usual. The duck meat is very delicious after braised, even the bones are left untouched.

Have all raw materials ready. Cut the duck meat into pieces, shred the ginger, slice the garlic, cut the dried chilies into sections, wash the star anise, cinnamon and bay leaves, and wash the black bean.

Place the duck meat in a pot under cold water, add ginger slices, bring to a boil, and blanch the blood from the duck meat

After the water boils, cook for 2 minutes

Pick up, rinse with cold water and drain

Clean the pot, drain the water, add oil, add a spoonful of sugar, and stir slightly

Add duck meat and stir-fry.

After the water is slightly fried, add shredded ginger, garlic slices, dried chili segments, star anise, cinnamon, and bay leaves.

After frying until fragrant, add the black bean paste. I personally like the taste of Lao Gan Ma, so I also added Lao Gan Ma black bean paste, which is very fragrant. Those who don’t like it too spicy can skip it, but adding spiciness will make it more layered

Stir fry slightly, stir evenly and then add appropriate amount of soy sauce and cooking wine

Add a bowl of water, bring to a boil over high heat and continue to simmer over medium to low heat
