Soak the chopped pork bones in cold water for half an hour, then wash them clean, put the cold water into a pot, boil the water until it bleeds, take it out, wash it again and drain the water.

Heat the oil in the wok. When it is 60% hot, add a little green onion and ginger and stir-fry until fragrant. Add the rock sugar and stir-fry, then add the crispy pork bones and stir-fry until the sugar color develops.

After frying until the sugar color becomes brown, add dark soy sauce

Add cooking wine

After evenly browning, add cinnamon, star anise and remaining onion and ginger and stir-fry, then add boiling water to cover the surface of the crispy bones.
