  1. Put the flour into a basin, add yeast, pour in water and stir into small flour, then knead into a smooth dough. Because the water absorption of flour is different, water can be poured in small amounts many times. The kneaded dough will be very soft, but it will not be so thin that it sticks to your hands. It can be as soft as an earlobe. (There are time-saving methods here, see the explanation at the end of the article)

  2. After kneading the dough, add 15g of cooking oil and salt, and knead the oil into the dough. The dough will feel greasy at first. After kneading, the oil will no longer be visible, but the dough will feel very moist. PS I didn’t put the salt in at the beginning because I was afraid that the salt would come into direct contact with the yeast and affect the fermentation.

  3. Put the kneaded dough into a basin, cover it and let it rest for 10 minutes. Knead it again and cover it for fermentation. Let the dough double in size, it doesn't matter if it becomes larger. PS Steps 1 to 3 can be completed before going to bed. Just take 10 minutes.

  4. You will find a lot of holes in the dough when you use your hands. Take it out of the basin and apply a layer of oil on the board with your hands, so that the oil will not stick to your hands. Place the risen dough on the board and knead it into a ball a few times.

  5. Then use a rolling pin to roll it into a 0.5 cm thick piece. Don't make it too thin, otherwise the inside will not be soft when fried. You can cut it into a length and width that suits you according to the size of your pot. If you want to standardize it, cut it into strips 10 cm long and 3 cm wide.

  6. Let the cut strips rest for a few minutes before cooking. This will make the frying more fluffy. Sometimes I am anxious and the effect is very good if I cook it directly without letting it rest. Just watch the time! Stack two pieces of noodles together and place the chopsticks vertically in the middle of the dough piece. Press both ends of the chopsticks with your hands to press a mark in the middle of the dough piece. Press slightly deeper so that the two pieces of dough will not separate when frying.

  7. Heat the oil until it is 70% or 80% hot (you can light the fire to heat the oil before pressing the seal). How to judge when to start frying? You can first take a small piece of dough and put it into the oil pan to try it. The dough will float up immediately after you put it in to indicate the temperature of the oil. Hold the two ends of the dough piece, stretch it out a little longer, and tighten both ends. Put into oil pan. PS Of course, I don’t want to stretch it out, so it will be fat and short after being fried, which is also very cute. There is no need to stretch it as long as the outside, and our pot is not that big. Ken X is also short and fat, right?

  8. The green dough sticks will float to the top immediately after being put into the oil pan. Use chopsticks to flip them over and fry over medium-high heat. Do not use low heat, as the outer skin of the fried dough sticks will be very hard. You can take them out when both sides of the fried dough sticks turn golden brown. Placing them vertically will control the excess oil.
