Amaranth juice glutinous rice dumplings
Overview
During the Dragon Boat Festival, I bought a lot of rice dumpling leaves. I originally planned to make a lot of rice dumplings, but because I was not skilled in making rice dumplings, my wrapping speed was too slow. I only wrapped half of a pound of glutinous rice and gave up, leaving the remaining rice dumpling leaves. Now I want to use it up as soon as possible, and I also had a sudden idea: soaking rice in amaranth juice to make rice dumplings. Although it did not achieve the expected effect, my skills and speed in making rice dumplings have improved a lot, and I still feel a sense of accomplishment.

Boil amaranth in boiling water

Soak peanuts overnight

Let the amaranth juice cool down and then soak the glutinous rice

The glutinous rice flour after soaking looks very nice

Take a rice dumpling leaf and fold it into a funnel shape. First put a small amount of rice, candied dates and peanuts

Put another layer of glutinous rice and fill the rice dumpling leaves

Wrap everything up with string and tie it tightly
