Grilled eggplant with green beans
Overview
My son always likes to order this dish when he goes out to eat, so the old mother has no choice but to learn from it. This dish is simple and easy to make and delicious. The only drawback is that it consumes a lot of oil!

Cut the beans into sections, cut the eggplant into long strips, chop the ginger and garlic, mix the oyster sauce, soy sauce and salt with water to make a juice and set aside.

Heat the oil in a pan and fry the beans. The vegetables will be cooked easily and can be picked up after a short frying.

Fry the eggplant too. Eggplant absorbs a lot of oil. When picking it up, you can press it hard to squeeze out a lot of oil.

Remove the oiled beans and eggplant and set aside.

Leave a little oil at the bottom of the pot and sauté the ginger and garlic until fragrant.

Add beans and eggplant and stir-fry.

Pour in the prepared sauce and stir-fry until the sauce is reduced over high heat.

Get out of the pot! It would be more delicious if you add some dried chili pepper, but there are children eating it so I didn’t add chili pepper.
