  3. Add 8g matcha powder to 50g hot milk and stir evenly with a tea whisk

  4. Take the reserved soaked gelatine, squeeze out and drain the water, add it to the matcha milk sauce in step 3 and mix well

  5. Beat the room temperature softened mascarpone cheese and sugar with an electric mixer until smooth

  6. Whip the light cream until it reaches 6 portions, as long as it has texture

  9. Add 5g of matcha powder to hot water and mix evenly with a tea spoon. Add rum and sugar and continue mixing to make matcha syrup

  10. Wrap the Uno UN27201 square mousse ring with tin foil, dip the finger biscuits in matcha syrup (fully soaked) and spread it flat on the bottom of the mousse ring (spread completely)
