First blanch the chicken pieces in a pot of boiling water. Remove and rinse.

Peel the garlic and slice the ginger.

Pour a little oil into the wok, heat it up, add ginger slices and garlic cloves and saute until fragrant.

Add the chicken pieces and stir-fry quickly.

Pour in the cooking wine and stir-fry evenly.

Add water to cover the chicken pieces and cook over high heat.

This is the time to deal with the potatoes and gluten. Peel and cut potatoes into cubes.

Slice the gluten and set aside.

When the chicken pieces are boiling, turn to low heat and simmer for about 10 minutes, add potatoes and cook together.

Cook until the chicken pieces and potatoes are soft and there is not much soup left, add the gluten and continue to simmer for 3 minutes.

Then add salt to taste and serve.
