The Zhoushan hairtail purchased online was delivered via SF Express. It was very fresh. I defrosted it first. One box was 800g, and it was all in the middle. I couldn’t finish it at one time. It was almost defrosted. I took half of it and continued to defrost it, and kept the rest frozen for next time.

After thawing hairtail, scrape off the silver film and remove the internal organs. The black film between the internal organs and the body of the fish must be removed and washed repeatedly under running water.

Add some salt and cooking wine to the hairtail and marinate for about 20 minutes.

Add an appropriate amount of flour to the plate and dip both sides of the marinated hairtail fish into a layer of flour.

Add an appropriate amount of oil to the wok, a little more than for stir-frying. Heat the fire until it is 50% to 60% hot. Add the hairtail covered in flour and fry slowly over medium-low heat.

Flip and fry until both sides are golden brown, add all the fried hairtail fish to the pan.

Peel, wash and cut the onions into sections, peel and wash the garlic and uncover the middle, peel and wash the ginger and slice it into slices, rinse the peppercorns with water and set aside. Take a small bowl and add 2 tablespoons of light soy sauce, balsamic vinegar, cooking wine, 1 tablespoon of sugar, and appropriate amount of salt. Hairtail fish has a strong fishy smell. You can use white wine to remove the fishy smell. It tastes better than cooking wine.

Flip once halfway to add more flavor to the hairtail. After the soup thickens, friends who like the taste of sesame oil can drizzle some sesame oil or sesame oil. I didn't drizzle anything on it, and the whole family said it was delicious.
