Overview

First, use food scissors to cut the back of the shrimp shell to remove the shrimp line, then wash it and cut it into 3 sections (because the shrimp I bought is relatively large, I divided it into three sections)

Add salt, cooking wine, egg white and starch, mix well, marinate for 15 minutes

Wash all ingredients, cut green onion into sections, slice ginger and garlic, and cut dry red pepper into sections

Then add appropriate amount of water to the sauce (2 spoons of light soy sauce, 1 spoon of vinegar, 2 spoons of sugar, 1 spoon of starch) to make a sauce and set aside.

Heat an appropriate amount of cooking oil in the pot until it is 50% hot. Stir the shrimps continuously with chopsticks until they are cooked and change color. Remove them and set aside.

Leave some oil in the pot, add dried red pepper and watercress and stir-fry until fragrant, then add onion, ginger and garlic and stir-fry until fragrant

Pour in the shrimp and stir-fry for a few times

Pour the prepared sauce into the pot and continue to stir-fry.
