Put a piece of ginger, a small handful of Sichuan peppercorns, a small piece of cinnamon bark, and two star anises into the pot. Add raw tripe, a small spoonful of salt, and enough water. Bring to a boil and cook for about an hour and a half. The chopsticks can be inserted easily.

Cook the tripe, take it out, wash and cut into thin strips.

One onion, cut into 12 parts and peeled in water.

Cut the green pepper into 4*2 strips, cut the red pepper into 2*2 diamond shapes, and blanch the potato slices.

Put oil in the pot and sauté the onions for a few times.

Add the green and red peppers and potatoes to the pot, stir-fry evenly, then remove and set aside.

Add more oil to the pan, add the tripe and stir-fry for a few seconds.
