  1. Chop the meat into fine pieces.

  2. Slice the mushrooms and blanch them in water for two minutes, remove and set aside.

  3. Cut leeks into sections.

  4. Heat oil in a pan and stir-fry ginger and garlic until fragrant. Add minced meat and stir-fry until it changes color.

  5. Add light soy sauce and oyster sauce and stir-fry evenly.

  6. Add the mushrooms and stir-fry for two minutes.

  7. Stir-fry the leeks until they are tender and add a little salt to taste.
