Oyster Egg Pancake
Overview
The first time I made it, the oyster cakes fell into pieces, but they tasted particularly good, (*^__^*) hee hee... Every time I try it, I bring a new taste to my stomach.

Preparation materials: barreled oysters bought directly from the supermarket, eggs, sweet potato powder, coriander, green onions

Clean the oysters first, pour them into a glass bowl, and rinse them with water (barrel oysters are generally cleaner)

Boil a pot of water. When the water boils, pour the oysters in

Add a spoonful of cooking wine to remove the fishy smell. Note: Blanch the oysters for about 25-30 seconds. It should not be too long, as the oyster meat will easily shrink over time.

Prepare sweet potato powder

Add some salt, chicken essence and pepper and mix

Pour in appropriate amount of water and stir into a paste

Pour the chopped green onion and coriander into the sweet potato paste

Stir evenly and start frying the pancakes

Pour oil into the hot pan, scoop out a few spoonfuls of oyster paste, like spreading pancakes

Beat an egg

Pour the egg liquid into the pot

Fry until the bottom side is golden brown, flip the oyster cake over (the skill is not good enough, and the dough is broken when flipping)

Beat another egg, pour in the flipped side, and fry until golden brown on both sides.
