Stir-fried squid tentacles with snow peas, carrots

I made this dish a few years ago. I am a snow pea addict and I buy it almost every few days when it is in season. It goes perfectly with stir-fried squid.

Peel the carrots and cut into slices.

Remove the eyeballs (ink) from the squid tentacles, remove the membrane, cut open and remove the small transparent pliers inside. Then cut into sections and set aside.

Tear off the old tendons on both sides of the snow peas, blanch them and then drain them into clean water.

Then put the cleaned squid into the pot and blanch it. After the water boils, pour the squid in and blanch it immediately.

Heat oil in a pan, sauté garlic and ginger until fragrant.

Add the squid, stir-fry, and drizzle with a few drops of rice wine.

Then add the carrot slices and fry for a few times.

Add a small amount of water and simmer for about a minute, then open the lid and add an appropriate amount of salt and soybean paste and mix well.

Add the snow peas and stir-fry a few times.

Add green onions and season to taste.
