Remove the scales from the croaker and clean the internal organs.

Chop onions and ginger and set aside.

Add the very fresh soy sauce.

Add salt and mix well.

Add cooking wine, mix well and marinate for more than 2 hours.

Beat the eggs.

Dip the marinated fish in a layer of flour.

Dip in another layer of egg wash.

Heat the oil in a non-stick pan and fry the croaker over medium-low heat.

Fry until both sides are golden brown.
