Considering the season, I’d rather leave it until winter. Today we are going to make a spicy stir-fried chicken with millet and pepper. Even at home, it is enough to satisfy your craving for spicy food. Friends who are not good at spicy food should remember to reduce the amount of pepper when making this dish.

Chop the three-yellow chicken into small pieces.

Put cold water in the pot, add chicken pieces and bring to a boil over high heat.

Cut the dried chilies into sections and chop half of the millet chilies. (Chopping the millet pepper will increase the spiciness of the dish, you can also skip this step)

Cut the remaining millet pepper and Hangzhou pepper into small pieces and set aside.

Heat the oil in the pot until it is 60% hot, then add star anise, peppercorns and bay leaves until fragrant.

Add onion and ginger and stir-fry until fragrant.

Add dried chili segments and chopped millet chili and stir-fry evenly.

Turn up the heat and add marinated chicken pieces.

Continue to stir-fry over high heat until the chicken is cooked, then add the pepper and millet pepper segments and stir-fry until the peppers are broken.
