Mid-Autumn Festival is an important festival for family reunion. It, along with the Spring Festival and the Dragon Boat Festival, are known as the three major traditional festivals in China. During this festival, children who have traveled far away should also go home to visit their parents as much as possible. This is irreplaceable and cannot be given up. Taking advantage of this festival, I made some puff pastry mooncakes and gave them to my family and relatives. Although the mooncakes are small, they have a lot of meaning. The circles of purple sweet potato pastry symbolize home as the center, no matter where you go, home will always be the center; the red bean paste represents a prosperous life and career; the duck egg yolk in the middle represents love in my heart - although I don't say I love you, I always think of you in my heart.

  6. Next, make the pastry dough: Mix purple sweet potato flour and Xinliang quinoa pastry flour evenly, sift into a basin, and add lard

  8. Wrap the two types of dough in plastic wrap and refrigerate for one hour before use

  9. Let’s deal with the salted egg yolk: Divide an egg yolk in half, spray white wine on it, if you don’t have a spray bottle, you can also brush it with a wool brush, put it in the middle of the preheated oven, 190 degrees, for 6 minutes, then take it out to cool naturally

  10. While the egg yolks are cooling, divide the homemade red bean paste into 20g pieces, totaling 18 pieces

  14. Weigh the refrigerated water-oil dough and puff pastry dough, divide each into 9 equal parts, roll into balls, cover with plastic wrap and let stand for 10 minutes

  15. Take a piece of water-oil dough and flatten it with your hands. It will be slightly thicker in the middle and slightly thinner at the edges. Place a purple sweet potato pastry ball on top

  17. Take a loose pastry dough ball, press it lightly in the middle with a silicone rolling pin, then roll it up, then roll it down again, and roll it into an oval shape. Do not roll it repeatedly, as the dough and pastry will mix and the layers will not form
