First, make a medium-sized dough. Mix 90 grams of high-gluten flour, 2 grams of high-sugar resistant yeast, 11 grams of egg liquid, and 45 grams of water.

Just knead it into a ball, it doesn't need to be very smooth, cover it with plastic wrap and ferment until it is 2.5 or 3 times the size. If it's too cold in winter, you can ferment it in warm water, or you can ferment it in an oven, cover it with a quilt, and turn on the air conditioner.

The fermented dough has a faint smell of wine, and fine holes can be seen when you tear it open.

Cut the medium-sized dough into small pieces, add all the ingredients in the main dough except butter and salt, knead until a thick film is formed, add salt and butter and continue kneading.

Ferment twice in an environment around 38 degrees Celsius until doubled in size.

Lightly brush the fermented dough with a layer of egg wash with wool and sprinkle with grated coconut.

Preheat the oven in advance, set the middle and lower layers to 175 for the upper heat and 165 for the lower heat, and bake for about 17 minutes.
