One fresh hairtail fish

Remove the head and tail fish intestines and cut into long sections

Heat oil in a pan, add minced ginger and garlic and stir-fry until fragrant, pour in light soy sauce, distiller's grains (rice grains from home-brewed rice wine marinated with salt), add water and bring to a boil

Pour in the hairtail and cook until the juice is reduced

Arrange on a plate and dry with chopped green onion
