Peel and crush pistachios. (Figure 1)

Soften the butter, add powdered sugar, and stir clockwise with an electric mixer. Stir butter until pale in color and swollen in volume. (Figure 2)

Add the egg liquid in two to three times. Use a whisk each time to beat the butter and eggs until they are completely combined before adding the next time. (Figure 3)

Sift in low-gluten flour, add chopped pistachios, and mix evenly with a spatula. (Figure 4)

Cut a hole in the piping bag, install the nozzle, and fill it with batter. Line a baking sheet with greased paper or tin foil, and pipe the batter downwards until it's the right size.

Preheat the oven at 200° in the middle for about 10-15 minutes. Take the cookies out of the oven and let them cool.
