Wash the eggplant and remove the stems. Do not cut it with a horizontal knife. You can place chopsticks on both sides of the eggplant to prevent it from being cut.

Chop the garlic and green chili peppers, using a deli cutting board.

Soak the cut eggplants in water and then deep-fry them, which will consume less oil.

Fry the eggplant until soft and cooked. Don't over-fry it, as the skin will be dry and hard to chew.

Put a tablespoon of water in the pot, add minced meat when the water is hot.

When the minced meat turns white, add sweet noodle sauce and stir-fry over low heat.

Add a tablespoon of sugar to the meat sauce and stir-fry until small bubbles form. Place it on the plated eggplant.

Mix the chopped garlic and chilli and put it on top of the meat sauce while it's still hot. Mix when eating.
