Shredded ginger, minced garlic, and bean curd are set aside! Add a small amount of water to fermented bean curd and make it thin

Pour water into a cold pot, add star anise, fried fruits, cinnamon and salt. Add as much salt as possible. Bring to the boil and simmer for 8 minutes until you smell a strong aroma

Pour in the washed snails, bring to a boil again, and remove from the pot! Be sure not to cook it for too long. Again, turn it over after boiling, take it out of the pot and drain it.

Dry the pot, pour in oil, heat it to 80%, add shredded ginger, minced garlic, and chili peppers (you can decide whether to put them in or not according to your personal taste). If you have a strong taste, you can also add sour bamboo shoots

Pour in the diluted fermented bean curd. If you like spicy food, you can add some chili sauce and continue to stir-fry for 1 minute
