Lotus root spine soup
Overview

Wash the pork spine and blanch it in a pot of boiling water for a while

After blanching, discard the water. Put the backbone, sliced lotus root and ginger slices into the electric pressure cooker. Pour in boiling water to cover the ingredients. Cover and simmer for 20 minutes.

After the pressure cooker is completely depressurized, open the lid, put the backbone, lotus roots and a little soup into the wok, add salt and white pepper and simmer for a few minutes. When the soup becomes reduced, pour in all the soup, and then add or not add salt depending on the saltiness. (The purpose of this is to make the meat and lotus roots better flavored and ensure the deliciousness of the soup)
