【Jinan】Youxuan
Overview
Youxuan, also called Youxuanhui, is a traditional snack in Jinan, Shandong Province. It is crispy on the outside, tender on the inside, and fragrant with green onions. Because it is shaped like a spiral and has an oily and golden surface, it is named Youxuan. People in Jinan mostly eat fried spinach while it's hot, paired with a bowl of shredded chicken wontons. It's high quality, low price, and wonderful. There are two types of oil spindles: round and oval. The more sophisticated ones are to poke a hole in the oil after the oil has matured, crack in an egg, and then bake it in the oven for a while. The egg and oil will become one, making the food even more beautiful. Youxuan is one of the indispensable staple foods for breakfast for old Jinan people

Knead salt, flour, and water into a smooth dough using a bread machine, or knead it into dough by hand

Knead the dough, cover it with plastic wrap and let it rest for more than half an hour

Wake up and divide into 6 portions

Mix the softened lard with chopped green onion, appropriate amount of salt and pepper powder to form a puff pastry

Take a piece of dough and roll it into a thin sheet, spread with pastry

Rectangle folded in half

Roll up from one end

Roll it up with the spiral side facing down

Press the flat cake base with your hands and finish in sequence

Preheat the electric baking pan, add an appropriate amount of oil, dip both sides of the cake base in oil and put it into the electric baking pan

Brown both sides until golden brown

Bake in a preheated oven at 200 degrees for 5 minutes to bake out the fat
