Mix the flour first and then prepare the rest of the ingredients.

Pick the beans, cut the potatoes and carrots into thick strips and set aside, and slice the pork.

First, marinate the pork with cooking wine, salt, shredded ginger and starch for preparation.

Roll out the risen dough thinly and cut into thin strips.

Heat the oil in a pot, put the Sichuan peppercorns, chili peppers, scallions and ginger slices into the pot and simmer the oil, then drain out a little of the simmered oil and set aside.

First put the marinated meat into the pot and stir-fry until browned.

Then put the beans, carrots, and potatoes into the pot one by one and stir-fry. The potatoes should be put in last and stir-fry. If you stir-fry them with the beans and carrots, it will be very rotten at the end.

Stir-fry for about two minutes and add an appropriate amount of hot water. Be sure to add hot water. The amount of hot water is enough to cover two-thirds of the dish. Then cover the rolled noodles on top of the dish, cover the pot and simmer for about ten minutes.

While the noodles are simmering, add coarse, light soy sauce, minced green onion, and minced garlic to the oil from the pot to make a sauce and set aside.

After the sauce is prepared and the braised noodles are basically simmered, spread the prepared sauce evenly on the noodles, sprinkle a little pepper, stir evenly, and serve.
