Remove scales and gills from fish head, remove internal organs, and wash.

Heat the oil in the pan until it is 70% hot, add the fish head into the pan and fry until both sides are lightly browned.

Add ginger slices and green onion segments and saute until fragrant.

To cook the cooking wine, pour enough boiling water and bring to a boil; skim off the floating oil, turn to medium-low heat and simmer for 40-60 minutes.

Discard the onions and ginger and add salt.
