Separate the caps and stipes of the shiitake mushrooms and wash them;

Blanch the stipes and chop them into pieces for later use;

Separate the egg whites and egg yolks, leaving the egg yolks in the container; wash and chop the celery; then put the minced carrots, minced mushroom stems, minced beef, starch, minced green onions, light soy sauce, rice wine, white pepper, and allspice into the container.
