Braised saury
Overview
Among home-cooked dishes, my favorite is stewed saury. There are many ways to stew saury. Today’s version is different from the past in that it adds some chopped chili sauce (don’t add it if you can’t eat spicy food)

Clean the swordfish

Grease the pan with ginger, add base oil, and fry the fish

Fry both sides until golden brown

Keep on a plate for later use

Add base oil to the pot, pour saury, add green onion and ginger. When the temperature is high, add white wine, vinegar and sugar

Add boiling water and a spoonful of chopped chili sauce (you can add dried chili peppers, but if you can’t eat chili peppers, you don’t need to add them)

Bring to a boil over high heat, simmer over low heat, add a little salt and pepper halfway through

Reduce the juice over high heat, turn off the heat and add chicken essence
