Overview

As the weather gets hotter, I don’t want to eat meat that much. I eat it up to four times a week. Vegetarian dishes appear much more frequently. Eggplant, beans and beans are all seasonal dishes, so you can eat them more. It’s not often that eggplant and beans are fried together. Haha, I didn’t expect it to be quite delicious.

  2. Cut the eggplant and beans into strips, and chop the garlic and green onions.

  3. Cut the red pepper into thin strips and put it in water and set aside.

  4. Heat oil in a pan, add green beans and fry until the skin changes color and wrinkles, then remove the green beans from the pan.

  5. Pour in the eggplant strips and stir-fry in the same way until the eggplant strips become soft, then remove the eggplant strips from the pan.

  6. Leave a little oil at the bottom of the pot, add chopped green onions and dried Sichuan peppercorns and stir-fry until fragrant.
