Avocado and Purple Cabbage Sushi Rice
Overview
I got a bag of Northeastern rice to try out. When I opened the bag, the rice was fragrant. After the rice was cooked, I was going to make some sushi rolls. I found that there was no seaweed at home, so I just mixed it with sushi rice and ate it!

Blanch half the purple cabbage

Cut the blanched purple cabbage into small pieces, put it into a food processor and puree it

Strain the purple cabbage juice through a sieve

Take a bowl of freshly cooked white rice

Add sushi vinegar, I also added some sugar and mix well

Cut avocado into small cubes

Add a little lemon juice

Use a hand mixer to beat the puree. I didn’t beat it too finely and there were no particles

Divide the mixed sushi rice into two parts, add avocado puree to one part and mix well

Add appropriate amount of purple cabbage juice to another portion and mix well

Use a mousse cake mold and fill the mold with rice

I also added a few sweet shrimps and wooden fish flowers for decoration
