Overview
Stewed lentil noodles is one of the most common dishes in the north. It is not accurate to say that it is a dish, because it is a one-pot stew that combines staple food, vegetables, and meat. It is easy to operate and uses simple ingredients. It basically has no basic knowledge and no operation.

Wash the lentils, tear off the old tendons, and fold into two-knuckle-long segments for later use.

Slice the pork, heat the wok and add oil to stir-fry. I use a non-stick wok at home, so I put less oil. Generally, an iron wok requires a little more oil.

After the meat changes color, add the lentils and stir-fry for a few minutes until all the lentils change color, then add the seasoning.

Put the light soy sauce first, then heat the pan and sauté until fragrant, then add water to cover the lentils. Don't be afraid of too much water, it will disappear after a while. Add a spoonful of yellow sauce to enhance the flavor, and you can add some dark soy sauce for color. My yellow sauce is quite salty, so I don’t add any salt.

Bring the water to a boil, then reduce the heat to medium-low, cover the pot and simmer for three minutes. At this time, take four cloves of garlic and mince it for later use. Early oxidation will help prevent and fight cancer. After three minutes, pour out two-thirds of the soup in the pot, and ensure that the remaining soup can continue to simmer for more than five minutes without burning the pot.

Cut the remaining noodles into sections of about 15 centimeters. If you like long noodles, you don’t have to cut them. However, it’s a bit difficult to mix the noodles later. Then spread the cut noodles evenly on the lentils, spreading them as wide as possible without bunching them up. At this time, the water in the pot should neither boil until the noodles nor run out of water quickly.

Simmer over medium heat for six minutes without burning the pot. Some people say you have to listen for the sound. This is still difficult for beginners. It is better to observe more. If there is still a lot of water, turn up the heat to reduce the juice. Then pour half of the soup you just poured out along the edge of the pot into the pot, and continue to cover the pot and simmer.

Make sure to simmer for another six minutes without burning the pot, pour the remaining soup into the pot, cover the pot and simmer for three minutes, then add the minced garlic, turn to low heat, open the lid and mix the noodles, and mix the noodles evenly.

After mixing the noodles, the juice is almost reduced. Pour in an appropriate amount of sesame oil and turn off the heat.
