Cut the beef brisket into large pieces with a knife, cut the ginger, onion, and garlic into large pieces, and prepare the bay leaves and star anise

Put the beef brisket into the pot with cold water, pour in a bottle of cooking wine, and turn on the heat to prepare for blanching
