Cut the pork belly into pieces and blanch.

Add vegetable oil to the pot, add sugar and fry until caramel color appears.

Add pork belly and stir-fry until it changes colour.

Add onion, ginger, garlic, star anise, bay leaves and rock sugar and stir-fry until fragrant.

Cook in the rice wine, stir-fry out the wine aroma, then add soy sauce and stir-fry evenly.

Pour in an appropriate amount of water and bring to a boil, then reduce the heat and simmer for 20 minutes, add salt to taste, continue to simmer for 20 minutes, and then reduce the juice over high heat.
