Super quick cold noodles
Overview
Super fast hand-cooked noodles: Boil the water in the pot until it is slightly boiling, add a few drops of oil, add a little salt, add an appropriate amount of dried noodles and use chopsticks to spread it. After the water boils, turn to medium heat and add cold water, use chopsticks to remove it. Turn it back to cold water and use chopsticks to remove it, until it is cooked. Remove the hard white core and place it in cold water to disperse. Turn the pot to high heat. Add the amaranth to the noodle cooking water. Boil until cooked. Remove and disperse in the noodle basin. Use a slotted spoon to remove the noodles and amaranth from the water and put it in a bowl. Pour in the garlic sauce and Zhongjing mushroom sauce and mix well.
