  1. Wash and drain the duck meat and set aside.

  2. Cut green onions, garlic, millet peppers, and ginger for later use. Green and red peppers and uncut ginger will be needed later.

  3. Heat oil in a pan, add chopped ingredients and stir-fry until fragrant.

  4. Stir-fry the ingredients until fragrant, add duck meat, bay leaves, and cinnamon and stir-fry until the duck meat changes color.

  5. Then add cooking wine, light soy sauce, dark soy sauce, oyster sauce, and bean paste and stir-fry until colored.

  6. Then add appropriate amount of rock sugar.

  7. Cover the pot and simmer for 10 minutes. Remember not to add water.

  8. Add the prepared ginger and simmer for 5 minutes.

  9. After the juice is reduced, add green and red chili peppers and stir-fry for a while, then adjust the color.

  10. The finished product is ready to be plated.
