-
Wash the hairtail and cut into sections, drain the water
-
Shred onions and peppers; slice ginger and garlic; cut dried peppers into small pieces and set aside
-
Mix an appropriate amount of salt, 3 tablespoons of light soy sauce, 3 tablespoons of vinegar, 1 tablespoon of sugar, and a little water in a small bowl and set aside. (Note that if you add enough salt, you don’t need to add more salt to the whole dish)
-
Heat the pan and pour in the oil. You don’t need too much oil, just a little more than normal for stir-frying. Once the oil is hot, turn to low heat. Dip both sides of the fish pieces in a little dry flour, then put them into the oil pan,
-
Then put it into the oil pan
-
Add the other fish pieces one by one and turn to medium heat.
-
Use chopsticks to gently turn the fish pieces over. Don't worry, the fish pieces dipped in dry flour will be easy to fry without frying or falling apart.
-
Fry until both sides are slightly golden
-
Pick them up piece by piece, leaving oil at the bottom of the pot
-
Add the sliced ginger, garlic cloves, and dried chilies and stir-fry until fragrant.
-
Pour in the sweet and sour sauce prepared previously
-
Pour in the fried fish pieces and cook over medium heat for a while. Carefully flip the fish pieces so that both sides of the fish pieces absorb the soup.
-
Add green pepper shreds, turn to low heat to drain the soup, and allow the fish pieces to absorb the flavor
-
When the soup is almost dry, add the green onions and take off the pot.
