Meat floss bread
Overview
I originally wanted to make rolls, but after putting it in the oven, I went to work on other things and baked it for a little longer. When I rolled it, I found that the surface would crack, so I had to make it into a bun stuffed with meat floss. . Ingredients: Soup: 25g high-gluten flour, 110g water. Dough: 240g high-gluten flour, 4g yeast, 2g salt, 25g fine sugar, 17g milk powder, 52g egg liquid, 50g water, 30g butter. Filling: appropriate amount of salad dressing, 100g seaweed and meat floss

Pour 25g high flour and 110g water into a small pot

Stir thoroughly

Heat over low heat, stirring constantly

until it becomes a thick paste

Pour into a small bowl and let cool, then refrigerate for 1 hour and set aside

Add all the dough ingredients except butter to the bread barrel

Pour in the chilled soup

Roll the dough into a roughly square shape, slightly larger than the baking pan you will be using

Spread a thin layer of butter evenly on the inside of the baking pan

Then put the rolled out dough into the baking pan, smooth it out and then ferment it for the second time

Leave to ferment until about 1.5 times in size

Brush the surface with a layer of egg wash

Then poke some holes evenly on the surface

Sprinkle some dried chives evenly and place in the preheated oven at 180 degrees for about 20 minutes

After taking it out of the oven, cover the surface of the baking pan with a piece of oil paper

Flip and take out the bread and let it dry until warm

Spread a layer of salad dressing on the surface of the bread

Sprinkle pork floss evenly

Then cut it in the middle, fold the two halves of bread in half, and then cut it into the size you like. Keep it sealed and eat it as soon as possible
