Overview
Generally, there is no distinction between spicy and spicy dishes, but this dish only uses numbing and abandons the spicy, making the numbing flavor more prominent and pure.

Cut the garlic sprouts into small sections and set aside. Peel and cut the potatoes into cubes. Add cold oil to the cold pan (very important!)

Fry over high heat until the skin turns golden.

Cut the tofu into cubes and fry in hot oil until the skin is golden brown.
