Quail eggs, red dates and white fungus soup
Overview
The climate is dry in summer and autumn, so I eat white fungus and lotus seed soup every day. Today I added red dates and quail eggs, which makes it even more nutritious.

Prepare ingredients

Wash lotus seeds and white fungus, soak them in hair, remove the stems of white fungus and tear into small pieces.

Wash the quail eggs and put them in a pot, pour in cold water. Bring the water to a boil and turn off the heat after 2 minutes. Soak in cold water until cool.

Peel the quail eggs and wash the red dates.

Put lotus seeds and white fungus into the pot and add appropriate amount of cold water. Bring to a boil over high heat, then turn to low heat and simmer for 25 minutes

Add red dates and cook for 10 minutes

Add quail eggs and cook for 2 minutes

Add brown sugar and mix well.
