Wash the lean meat and cut into thin slices and set aside.

Put the sliced meat into a small bowl, add soy sauce, starch, and cooking wine and marinate for five minutes.

Use a knife to scrape off the skin of the loofah, wash it, cut it in half and slice it for later use.

Peel the garlic and cut into slices, cut the red pepper and green onion into sections and set aside.

Heat the wok, add cooking oil to heat, add the meat slices and stir-fry until cooked through, then remove.

In another pot, heat up the cooking oil and stir-fry the onions, garlic and chilies.

Add the loofah slices and stir-fry until cooked. (You can add a little water to avoid burning the pot)
