Wash the chicken, dry it and set aside.

Slice the ginger and cut the green onion into sections. Mix allspice and salt to coat the chicken.

Apply evenly. Put some ginger slices in the chicken belly and marinate for 2 hours.

Wash the rice and set aside.

Mix dark soy sauce and honey into sauce.

After marinating, rinse briefly with water, put it in a pot, add green onions, cooking wine and a little ginger slices, add an appropriate amount of water and cook over high heat. Remove and drain.

Line a baking sheet with tin foil and place a layer of rice, brown sugar and black tea leaves in sequence.

Spread sauce all over chicken.

Put the chicken on the grill, place it on the upper layer of the baking pan, preheat to 230 degrees, middle layer, upper and lower heat, about 30 minutes, depending on your preference, I like to bake it longer. When the tea leaves and brown sugar start to smoke and the skin of the chicken is colored, take it out and brush it with a little sesame oil.
