Shredded radish with shrimp paste
Overview
Shrimp paste, also known as shrimp cake, is a sticky paste made from various small fresh shrimps, fermented with salt, and ground into fine pieces. Since shrimp paste is a stored fermented food, during storage, the protein will be decomposed into amino acids, giving it a unique fragrance, delicious taste and endless aftertaste. Moreover, the calcium contained in shrimps decomposes into calcium that is easily absorbed by the body, and the fat is converted into fatty acids. Therefore, shrimp paste is also a rich source of high-quality protein, calcium and fatty acids. Although shrimp paste has a delicious and unique taste, nitrites are produced during the pickling and fermentation process. Therefore, shrimp paste is generally used as seasoning. When eating shrimp paste, it is best to eat more fresh vegetables and fruits rich in vitamin C, which can block the synthesis of nitrosamines in the stomach.
