Spicy Lemon Chicken Feet

  1. Wash the chicken feet bought from the supermarket, remove the toes and cut them in half. Add water to the pot, add ginger slices, cooking wine, star anise leaves, cinnamon and an appropriate amount of salt. After the water boils, add the processed chicken feet. Cook on normal fire for about 5-6 minutes. Use chopsticks to prick the meat. Take out the chicken feet and rinse them with cold water. Rinse them again and again. 🈶️Ice water is better and can make the chicken feet stronger.

  2. Prepare ingredients, chop onions, peppers, garlic and coriander and set aside.

  3. Rub the lemons with salt before slicing them, and remove the seeds to prevent them from becoming bitter. The amount of carrots used is based on personal preference. I used two, peeled and cut into strips, about 1cm wide, and had them ready for later use.

  4. Start to adjust the water for lemon chicken feet, add fresh soy sauce, add a little more soy sauce, add an appropriate amount of balsamic vinegar, add some rock sugar, an appropriate amount of salt and chicken essence, add cold boiled water, mix well and taste if it tastes OK. If you are worried that the color of the light soy sauce is not enough, you can add some dark soy sauce.

  5. Finally, add the chopped ingredients and add the chicken feet and mix well. If you like it spicier, you can add more millet. Cover it with plastic wrap and put it in the refrigerator to keep fresh. After an hour, you can taste it to see if the taste is enough. If it is not enough, add the corresponding ingredients. After refrigerating overnight, you can enjoy it.
