Cut the oxtail into small pieces

Soak the bleeding water in clean water for about 1 to 2 hours

Soak the oxtail and wash the blood with water

Put the oxtail in a pot of water, add an appropriate amount of scallions and two slices of ginger and bring to a boil over high heat to remove the blood from the oxtail

Remove the oxtail and drain the water

Onions, tomatoes, tomato sauce, and red wine are ready (I brew the red wine myself)

Cut onions into cubes, size of your own

Prepare the seasonings, bay leaves, scallions, star anise, ginger, and black pepper powder.

Pour corn oil into a cold pan and heat over high heat until 70-80% hot

Add the chopped onions and fry until fragrant

Add tomato pieces and stir-fry

Add oxtail and stir-fry

Add a little black pepper to taste

Add appropriate amount of dark soy sauce for coloring

Pour in red wine (home-brewed) and stir-fry

Add two star anise, four bay leaves, one white scallion, two or three slices of ginger, and 20 grams of tomato paste

Pour into the pressure cooker and add an appropriate amount of salt, select the tendon button and OK for 30 minutes
