Fish chin stewed with tofu
Overview
The meat of the fish chin is plump and melts in the mouth. It is stewed with tofu and is rich in nutrients. It is especially suitable for the elderly and children.

Prepare chopped green onions, ginger slices, garlic cloves, and various seasonings. Set aside.

Cut the tofu into cubes and set aside.

Cut off the fins from the chin of the fish, scrape off the residual scales, wash and dry the fish.

Pour in an appropriate amount of starch to coat the fish chin with starch.

Pour vegetable oil into the pot, when the oil is hot, add the fish chins one by one, fry until small bubbles appear on the skin, remove and control the oil.

Then put the tofu into the oil pan and fry until both sides are slightly brown and take it out.

Leave oil in the pot, add onion, ginger, garlic and dry ingredients and stir-fry until fragrant.

Add the fish chin, pour in light soy sauce, dark soy sauce, cooking wine, sugar, salt and vinegar.

Add the tofu, add an appropriate amount of hot water, bring to a boil over high heat and then simmer over low heat for 30 minutes.
