I haven’t cooked for myself for a long time. My brother is in the first grade. In order to help him develop good study habits, I was forced to be a stay-at-home mother for a year. I was on a weight loss diet and my brother couldn’t eat much, so we could only eat a simple meal at noon. My brother would eat more after school in the evening. The first time I made the braised pork, I added too much dark soy sauce. It didn’t look very good. It felt a bit like dark cooking. The taste was really good. The two brothers ate two bowls of rice. Cut the pork belly into mahjong pieces.

Prepare onions, ginger, star anise, and rock sugar.

Put a small amount of vegetable oil in the bottom of the pot, add star anise and rock sugar until the rock sugar turns into caramel color and pour in the pork belly.

Stir the pork belly for a while until the pork belly turns into caramel color.

Add appropriate amount of water, add ginger, green onions and dark soy sauce and bring to a boil. Turn the rice cooker.

There is a 45-minute intensive cooking program and a 35-minute pot roasting program to make it more tender.

After simmering, remove the juice from the pan and add an appropriate amount of salt (I personally feel that salt should be added to make it taste better, maybe Chengdu people have a heavy mouth). I added a little more soy sauce, so the color is darker. Pick up the star anise, green onions and ginger, remove from the pot and serve on a plate.
